Please tell us a little about yourself:
I’m Jonatan Mendoza, two time Barista Champion of El Salvador. I’m 24 years old and I from Juayúa. I work in quality control and also as a barista in my own company, Bourbon Coffee Roasters. My favorites hobbies are taking pictures, playing video games, listening to music, drawing and oh… I also love pets!
What are you excited to do in Boston?:
Looking forward to some new experiences, knowledge, and coffee culture.
Please list the coffee competitions you have participated in, what year they took place, and your results:
2017 3rd Place – National Barista Championship, El Salvador.
2018 1st Place – National Barista Championship, El Salvador.
2018 31th Place, Round One – World Barista Championship, Amsterdam, Netherland.
2019 1st Place – National Barista Championship, El Salvador.
How do you see the coffee industry changing in the future?:
We know this industry is changing every day because we are always finding the best cup of coffee with different techniques, processes, origins, roast profiles and tools. Who knows how the industry will look in the future? I’m sure that I will still be in it.
Where do you see yourself in five years?:
I’m currently studying industrial engineering, so in less than 5 years I will be an engineer. I hope to apply my chemistry and math knowledge in the process to get better flavors in the cup. I can see myself growing our family business.
What are your interests outside of coffee?:
In my spare time I enjoy being with my family, flying drones, maths, graphic design, photography, and video games.
Is there anyone you would like to thank or recognize, or who helped you to prepare for the WBC?:
I have to say thank you so much to my coach/brother, who supported me and taught me his knowledge and passion for this industry. Also a huge thanks to my family (mom, dad, Mauro, Eduardo and Cecibel), who’ve helped me a lot from the beginning. A huge thank you to the entire Bourbon Coffee Roaster community, for all their tremendous support.
