Please tell us a little about yourself:

My name is Heath Dalziel. I have been working with specialty coffee for 5 years. I have a small shop in Adelaide, South Australia called Third Time Lucky Coffee. I’ve been working in the hospitality industry since I was 16 and love the diversity. I’m very amazed where my career has taken me thus far and look forward to poking my nose through a few more doors to see what’s going on.

How did you get started in coffee?:

After experiencing Ethiopian Sidamo coffee at a local coffee spot, my friend and I thought we would like to try and get into the coffee industry by opening a small cafe. 5 years later here I am with a small shop.

What are you excited to do while you are in Brazil?:

Haven’t even thought about it yet!

What was your first amazing experience with coffee?:

The one that sticks in my mind as the first was Ethiopian Sidamo run as espresso, I suppose that’s the one for so many people that makes you realise coffee can be so much.

What is your favorite coffee brewing method and why?:

I think cupping is probably it, followed very closely by v60. Cupping for purity of expression, v60 for elegance and refinement of expression.

What coffee-producing country most interests or excites you?:

Tough question, I’ll need to pick two—Panama and Ethiopia. But exciting coffee can come from many places!

What are your interests outside of coffee?:

I love live music, and have a hobby of live projection art for music. I’m interested in vegetable gardening and would love to try making ceramics.

Where do you see yourself in 5 years?:

Did not really see myself here so who knows!
