Please tell us a little about yourself: 

My name is Sam Spillman. I live in Seattle, Washington and work as the head trainer at Dillanos Coffee Roasters. Coffee is my life, whether I’m training new baristas at Dillanos, or dialing in my morning coffee at home.

What are you excited to do in Boston?:

This will be my first time to Boston, so I am excited to see a new city. Also, excited to go to my first Boston Red Sox’s home game at Fenway Park.

Please list the coffee competitions you have participated in, what year they took place, and your results:

Brewers Cup 2013; Barista 2014; USBC 2015; USBC 2018, 7th; USBC 2019, 1st

How do you see the coffee industry changing in the future?:

I don’t know what the future looks like for the coffee industry. I think as coffee professionals we should be focusing and remembering where coffee began and how it has brought us together today.

Where do you see yourself in five years?:

In five years, I hope to be an inspiration and leader to others who want to grow in the coffee industry.

What are your interests outside of coffee?:

I love mountain biking… and honestly, biking of any sort.

Yes. Brian, my husband, with a shared passion, helped me throughout this entire process. Phil Beattie, for roasting my competition coffee. Kyle Ramage, for his coaching and inspiration.
